Last night I was sitting on the couch after a day of doing fun Sunday things like washing and housework. I had finished dinner and was still a bit peckish and after something that was a bit on the sweeter side. So I did a quick search through my files and I found this wonderful recipe, it takes less than 10 minutes to prepare and minimal washing up afterwards, which is perfect for a Sunday evening. I hope you enjoy it as much as I did 🙂 

Serves 1

20g butter, melted and slightly cooled

1 egg

¼ cup coconut flour

50g fresh blueberries

1 tablespoon almond meal

1 tablespoon water

2 tablespoons lemon juice

2 teaspoons no cal sugar substitute 

½ teaspoon gluten free baking powder

Fresh whipped cream to serve (optional)

 

Method

Whisk together the melted butter and egg in a bowl until combined. Gradually add the flour, almond meal, no cal sugar, baking powder, water and lemon juice. Stir until fully combined. Then add the blueberries and stir through.

Place the mixture in to a 250ml (1cup) size microwave safe mug and smooth the surface. Microwave on high for 1½ minutes (this time depends on the power of your microwave). Let rest for ½ to 1 minute. Serve with whipped cream if desired. Enjoy
